Organized by the Municipal Department of Culture and Tourism and the Committee for the "Feste del Crocifisso e di San Nicola," the 14th Festival of "Cavatello di Rutigliano" is scheduled for Sunday, August 3rd in Piazza XX Settembre, starting from 8:30 PM. This gastronomic event is dedicated to the traditional local variety of fresh pasta.

At the stands set up in Piazza XX Settembre, attendees can enjoy cavatelli, a fresh pasta shape typical of the Rutigliano culinary tradition: small pieces of semolina dough, "round and elongated, which are pressed with a finger to obtain a hollow shape," according to the description provided by the "Liber de coquina," one of the most famous medieval cookbooks. The name "cavatello" derives from the method of making this pasta shape by "carving" with the fingers: in Rutigliano, tradition holds that these pieces of water and semolina dough are still created today by "carving" with the index finger only.

During the festival, the Cavatelli will be freshly cooked and served with various sauces, accompanied by local wine ("U meir tast") and seasonal fruit.

Starting from 9 PM, the festival will be enhanced by a concert from La Zanzarita Orchestra - A Tribute to Renzo Arbore, featuring the special participation of Mariano Caiano, who was the official voice of Renzo Arbore's Italian Orchestra for over 20 years: a musical show with the most beautiful classic Neapolitan songs of all time.
