On Saturday, January 17, 2026, from 12:30 PM to 2:30 PM, the Ostello Novello in Novoli (in the tent area in front of Piazza Regina Margherita) will host the **Table of hospitality and solidarity organized by Massimo Vaglio**.
This is the **sixth event** included in the programming of **Radici del Fuoco – Memories of Fire and the Future**, and it is the sixth of eight appointments in the program, organized by our association in collaboration with the Municipality of Novoli.

This moment is dedicated to the gestures that tell the story of our community: **hospitality, sharing, and the symbolic value of food during Salentine festivals.**
The initiative was born to **offer a warm meal to those who are far from home** – vendors, technicians, volunteers, visitors, and pilgrims – to show support and promote human connection during our celebration. An **open table** designed for those passing through Novoli during the festival, to transform a simple warm meal into a gesture of care and belonging.
An invitation to gather around food as a place of meeting, identity, and community.
**Massimo Vaglio**, originally from Nardò in Salento, is an expert in gastronomy and southern agri-food production; a freelance journalist; a trainer at vocational training agencies and hospitality schools; an agrotechnician specialized in agroecology; a cook; and a restaurant owner; but he is primarily a naturalist and passionate environmentalist. He is an editor for the magazine Puglia & Mare and collaborates with the magazine quiSalento, for which he has curated the food and wine column "Salento to Savor" since 2004. His publications include: “La Cucina del Salento” (A.N.D.O. 1996 - Besa 1999); “Cicorielle e Lampascioni” (Besa 2000); “Piccolo Codice della Cozza” (Besa 2001); “La Cucina del Mare di Puglia” (Besa 2004); “Salento Sapori e Profumi” (Ed. Salentina 2007); “Ricette e Segreti della Cucina Salentina” (Guitar 2005); “Ricette e Segreti dei Dolci del Salento” (Guitar 2006); “I Piatti delle Feste” (Guitar 2007); “L’ABC della Cucina Salentina” (Besa 2009); “Il Ricettario di Nonna Uccia” (Besa 2013); “Piccolo Codice del Lampascione” (Cibu-Salento 2015); “La Cucina del Capo di Leuca” (CibuSalento 2016); “Pesci del Salento” (Grifo Ed. 2016); “Salento, raccolto, pescato e mangiato” (Grifo Ed. 2018); “Santu Sitru e altri racconti” (Parasaula Ed. 2020); “Pesci ricchi, pesci poveri” (Ed. Coop. Espera 2021); “Etnoantropologia gastronomica sallentina. La quintessenza della dieta mediterranea” (Ed. Coop. Espera 2022). He has also published numerous short stories, some of which have received awards in literary competitions, and has made several contributions to books and magazines.
The meeting is organized by the Saletta della Cultura Gregorio Vetrugno Aps of Novoli, which, with the OSTELLO Smart & Art project for artists in residence, was selected as “Winner of Luoghi Comuni – an initiative promoted by the Youth Policies of the Puglia Region and ARTI, funded with resources from the Fund for Development and Cohesion 2014-2020 and the National Youth Policies Fund.”
